No Bake Cheesecake - S

    This recipe was originally posted on Low Carb Friends under the title Best Tasting No Bake Cheesecake. Who can resist doing the ahem... market research on something like this?

    I had the opportunity to try this out for an anniversary dinner and tweaked it to make it a little more purist. Smashing success!! I will not be looking for another no bake cheesecake recipe.

    Some of the guests are not 'whole food eaters' but tried this anyway. I didn't tell them there was no sugar in this and they didn't even guess. They asked for seconds!!

    If you want to make a nice dessert for your guests that are not on THM, but don't want to have to make a different dessert for you, just make this. Everybody wins!

  


No Bake Cheesecake
 
CRUST
 
1 cup of crushed nuts*
1 Tbsp of Butter, softened
1 tsp of Almond Extract (or vanilla)
 
Combine all ingredients in a pie pan and mix well.
When combined, press into the bottom of the pan.
Set aside.
 
* You can combine any mixture of peanuts, almonds, walnuts, or pecans.
I used 1/3 cup each of almonds, walnuts, and peanuts.
 
CHEESECAKE
 
8 oz of Cream Cheese
1/3 cup of Xylitol or Erythritol
1 cup of Sour Cream
2 tsp of Vanilla Extract
1 recipe of Whipped Cream
 
Beat cream cheese, then beat in sweetener. Blend in sour cream
and vanilla. Fold in whipped cream. Spoon into crust. Chill until set, about 4 hours.

I like to put Strawberry Topping on this. Yumm!

This pie doesn't seem to set quite firm enough to get a clean slice out.
I just sort of spoon it onto plates. It might set up better if you add 1 tsp of glucomannan
when beating the cream cheese.
