French Toast - S

    I love french toast. I do not love getting fat. French Toast is synonymous with getting fat.
Not anymore! This is a great low carb French Toast recipe that, if eaten right, will not add to your waistline! Rejoice!

This recipe uses an interesting little ingredient that gave me pause the first time I read it....
 
 
   
Pork Rinds!!!
  
 Yes, I agree it is weird, but it works. Don't knock it 'til you try it! You can't even tell there are pork rinds in it, if you do it right.
 
                                                                             
 
    French Toast - S
 
2 eggs
1/4 cup of Heavy Cream
plan approved sweetener of choice
1/2 tsp of cinnamon
1/2 tsp of vanilla
1/2 of a 3 oz bag of Pork Rinds
 
Put pork rinds in a blender and blend to a fine crumb mixture. This is important. If the pieces are not ground fine enough, your french toast will have a rubber texture to it. Yuck.
Dump ground pork rinds into a bowl.
Put all the rest of the ingredients into the blender and process until combined.
Pour egg mixture into bowl with pork rinds, stir well.
Let set about five minutes to thicken.
Meanwhile, turn a skillet or frying pan on to medium heat. When hot, melt a little butter into pan.
Pour batter into pan as you would pancake batter, you might need to spread a little with your spatula.
Cook until golden brown on underside, then flip and cook other side.
Serve with sugar-free syrup of your choice or you could try Gwen's Berry Syrup.
