Orange Dreamsicle Cake - S

    I found a recipe for chocolate and vanilla cupcakes over at Just Right Porridge and wanted to try the vanilla recipe, but I didn't know what kind of icing to put on it. At the suggestion of a friend, I decided to try orange icing! Then I decided if I was making orange icing, I might as well make orange cake. Hence, the birth of Orange Dreamsicle Cake - THM Style!!

Orange Dreamsicle Cake - S

6 tbsp of Butter, melted
6 eggs
1/2 cup of Unsweetened Almond Milk
2 tsp of Vanilla Extract
1/2 tsp of Orange Extract
4-6 drops of Orange Essential Oil
1 cup of Flaxseed Meal
1/3 cup of Coconut Flour
3/4 cup of Xylitol
1/4 tsp of Stevia extract
1 Tbsp of Baking Powder
1/2 tsp of Salt

Combine wet ingredients and dry ingredients together in separate bowls.
Mix together. Pour into greased 9x13 baking pan.
Bake at 375 degrees for 20-25 minutes.
Bake for 15-18 minutes for 12 cupcakes. 

1 1/2 cups of Heavy Whipping Cream
1/4 tsp of Stevia Extract (or to taste)
4-8 drops of Orange Essential Oil
1/2 tsp of Glucomannan

Pour whipping cream, stevia extract, and orange oil into mixing bowl.
Whip on high until stiff peaks form. While whipping add glucomannan. 
Taste and adjust sweetness.

Once cake is cooled, spread icing on top.
